A leftover turkey appetizer recipe that you will wish you ate as a main dish.

Let’s get real.

Sometimes the Thanksgiving leftovers just end up being, for lack of a better description, boring.  As the turkey dries out it gets harder and harder to swallow.  If you are like me, that is about the time to turn to Pinterest to type in “leftover turkey recipes” for inspiration.

Recently KFSM Channel 5 Morning News reached out for a three-part series on Thanksgiving.  Part 1 covered the pre-planning, Part 2 talked about spicing it up and adding charm, and Part 3 was all about leftovers.  My goal for the leftover segment was to create a dish that incorporated many key ingredients of Thanksgiving leftovers, the turkey, rolls, and cranberry sauce.

Create a sandwich, right?Close, but not quite.

I created an appetizer with the leftover turkey, rolls, and cranberry sauce and added goat cheese as the extra ingredient.  As Channel 5 Morning News anchor Heather Lewis said quite aptly, “this is like a buffet for the mouth.”

Thanksgiving Leftover Turkey Appetizer

Serves  6-8

Ingredients

3 leftover Thanksgiving rolls

12 slices of leftover Thanksgiving turkey breast or dark meat

6 tablespoons of cranberry sauce

6 tablespoons of goat cheese, softened

Instructions

1.

Cut the rolls diagonally into slices.

2.

Take a knife and spread a layer of goat cheese on each slice, approximately 1 tablespoon per slice.

3.

Spoon a layer of cranberry sauce on each slide on top of the goat cheese, approximately 1 tablespoon per slice.

4.

Place turkey on top of cranberry sauce.

5.

Serve.

6.

If you want to take it to the next level, heat the broil in a toaster oven and place the appetizer under the broiler for about a minute or until the goat cheese starts to soften BEFORE adding the turkey on top.  We certainly don’t want to dry out the turkey even more.

There is something quite glorious about simplicity There is something quite glorious about simplicity. I'm really feeling it as Dennis and I sit here in our living room, next to the crackling fire. Full disclosure, this picture isn't me BUT I do have the exact same coffee cup. Anyoo, I'm reminded how wonderful it is to be still. Not that I ever forget that reminder, it's just easier to revel in it, next to a fire. With snow softing falling outside. You know what I mean?

First, it was a percolator.
Then came the Breville coffee maker.
Next, along came a bodum pour over.
Quickly replaced by a French Press.
Then came an Aeropress.
Followed by a rediscovery of a favorite instant brand we enjoyed in Isreal.
Now, Aeropress is making a comeback. 
And our beloved LaVazza espresso.
Which tastes like vacation at the Sonnelap in Vail.

Am I the only one who does coffee in phases?

What's next?

Probably need an espresso maker!
Isn't it interesting how two things with the same Isn't it interesting how two things with the same word can convey entirely different moods?

Microwave turntable = quick, fast, speed

Record player turntable = slow, easy, chill

Both have their places. But man, oh man, I am finding myself craving more of the latter: slow, easy, chill. 

Now, to get a record player...
Arkansas Black Apples are in season, and the persi Arkansas Black Apples are in season, and the persimmon trees are loaded down hard. Even though many markets are closed for the season, there is still a bounty if we look around!
