Growing up on scrambled egg pizzas.

Scrambled egg pizza 1 (c)nwafoodie

My sisters and brother will remember this and laugh.

Nothing was quote-normal-unquote when it came to mom’s dishes.  For starts, we never had sugar or anything remotely sweet.  She substituted ingredients whether it made sense or not and sometimes it even worked.

She loved to entertain and each week we had what seemed like (to a little kid) hundreds of people coming over for dinner after church.  Sometimes we would have overnight guests and then dinner expanded into breakfast.

I loved those dinners and breakfasts.

She served exactly two meals.  Dinner was a ground-beef stroganoff type dish on homemade whole wheat rolls (no sweeteners) and breakfast was scrambled egg pizza with raisins.

Yep.

Raisins.

Strangely enough, it worked.

Although Dennis won’t let me add raisins to our eggs (meanie), he loves it when we have scrambled egg pizzas. They are surprisingly tasty and may make you wonder why you never had one before.

Here, I made you one.

Scrambled Egg Pizza for Two

Ingredients

2 pita breads (I use Ezekiel Good for Life whole wheat)

Tomato sauce, 2 tablespoons per pita bread

1 teaspoon olive oil

¼ pound turkey burger

sea salt

black pepper

sage

cumin

garlic powder

4 baby portabella mushrooms

1 tablespoon chopped black olives

whole milk ricotta cheese, 1 tablespoon per pita bread

4 eggs

½ cup shredded mozzarella cheese

Instructions

1.

Place two pita breads on parchment on a sheet pan.  Layer with tomato sauce.

2.

Head oil in a skillet on medium-high heat and cook turkey burger until crumbled and brown.

3.

Add salt, pepper, sage, cumin, and garlic powder to the turkey and mix well. Remove from heat.

4.

Thinly slice mushrooms and place on pitas.

5.

Add black olives to pitas.

6.

“Dot” ricotta cheese on pitas, evenly spaced.

7.

Add meat to the pitas.

8.

Preheat oven to 400 degrees.

9.

Reheat skillet and add olive oil as needed.

10.

Break 4 eggs in a bowl and mix and add to skillet.  Scrambled just until wet and not dry, adding salt and pepper.

11.

Remove from heat and add as topping to the pitas.

12.

Sprinkle on cheese and put in the oven.

13.

Bake for 10 minutes until bubbly and remove from heat.

Happy making your own family food memories.

Eat well, my friend. Eat well.

Ha! I love quirky dishes that come from a family history with a story like this one. It makes them taste even better, I swear.

I can honestly say that I've never had a scrambled egg pizza, but now I must try one. I may be in there with Dennis, however, on the raisins:)

Link in bio for my Thanksgiving-inspired pot pie that uses three @wickspies 8″ raw circles. One for the base and two to cut lattice strips (using a ravioli cutter) so that it looks extra pretty. Of course, you could just use two raw circles. One for the base and one for the top. Just cut some slits on the top crust so that some ooey-gooey delightfulness can do its thang.
