Drop-in guests? Here’s a quick cucumber and hummus appetizer solution.

May 16, 2011 Leave a Comment

I must be in a cucumber state of mind.
A few days ago I blogged about a crowd-pleasing cucumber salad with yogurt-dill sauce and here I am…  chattering on about cucumbers.  Again.
Cucumbers are like pets.  They are there for you when you need a pick-me-up and they are loyally steadfast companions when you need them most.
Event:  Drop-in guests
Pantry check:  Hothouse, slicing or everyday Walmart bin-dump cucumbers
Refrigerator check:  Hummus
Plating check:  black sesame seeds or a drop of basil pesto or a bit of sun-dried tomato
Process check:  Peel cucumbers to remove skins.  Slice into bite sized pieces.  Spoon cute little dollop of hummus on top.  Top with sesame seeds, pesto, or sun-dried tomato
Smugness check:  Yeah, just a little something you “whipped up.” You’re so good.
I’d love to hear about ways you quickly whip up your own unexpected/expected appetizers!  Leave a comment or two!

I know there are so many camps when it comes to chili: beans/no beans, ground beef/cubed steak, canned tomatoes/no tomatoes, onions/no onions… let me be the first to say that this chili is perfection.

It seriously needs nothing else.

Except for toppings and a spoon.

Order the mix by February 1st so you can have it for the kickoff!

They ship everything via Priority Mail within 24 hours so, if the USPS is working smoothly, February 1 should be a very safe ‘order by’ date.

Great news, the recipe for making their Championship Chili is right on the Pure Texan Chili Mix bag and it is sooooooo easy to make.

We’re talking simple no-fuss steps:

Brown two-pounds ground beef, drain and add mix, add 8 ounces tomato sauce and 10 ounces of water. Summer very slow for 45 minutes and voila! Done!

Ad. Stop sneaking the spiced candied pecans!” I Ad. Stop sneaking the spiced candied pecans!” I said this not once, not twice, but almost three times before Dennis beat me to it those words all over again. “I’m sneaking some more,” he happily declared.

“Just like becoming an expert in wine–you learn by drinking it, the best you can afford–you learn about great food by finding the best there is, whether simply or luxurious. Then you savor it, analyze it, and discuss it with your companions, and you compare it with other experiences.” – Julia Child
