Thank you for stopping by our Southern Summer Nights virtual dinner party!

I am so happy to virtually see you!

(Virtual right cheek air-kiss. Virtual left cheek air-kiss)

May I get you a refreshing virtual drink?

Here, let me pour you a virtual glass of a refreshing Melon Mint Mojitos.  Mmmm, oh my.  Delicious isn’t it? Perfect for these hot muggy summer nights with its lightly sweet crispiness and soft whisper of mint.

Oh, would you rather have the PG version without the alcohol?   I have that too… don’t worry… even though it has the same name, the darker color will not leave you second-guessing whether or not you grabbed the wrong virtual drink.

Have you made it over to the virtual appetizer table yet?

Debbie really outdid herself this time with six appetizers coming your way and a helpful guide on how to plan the right amount of appetizers.  Be careful and don’t load up too much and ruin your virtual appetite. Why? Because I want to make sure you have enough belly space to enjoy Beth’s virtual side dish tomorrow andChristie’s virtual side dish on Thursday.  Julie is serving the virtual main dish on Friday, complete with Gina’svirtual table decorations.  Saturday is the finishing touch when Anita ends our dinner party with the perfect virtual dessert.

Are you still thirsty?

May I top off your drink?

If you would prefer an actual drink instead of a virtual one, here are the recipes.

Melon Mint Mojito

2 tbsp agave nectar

10 fresh mint leaves, washed and dried

2 tablespoons lime juice

2 ounces white rum

3 ounces club soda

crushed ice

4-6 cantaloupe melon balls

Place mint leaves in a cocktail shaker and add lime juice and agave nectar.  Using a muddler, muddle the mint for approximately 30 seconds to release the mint essence.  By all means, if you love mint, add as much as you like.  I prefer a whisper of a hint of mint.  Add crushed ice to shaker and then rum and club soda.  Stir with long spoon and pour into tall glass.  Add melon balls to the glass by using the long spoon, placing them strategically to where they look good enough to eat.  As you drink down your Melon Mint Mojito, the melon balls will absorb some of the mint mojito and will be a delicious ending touch to eat.

Mock Melon Mint Mojito

10 fresh mint leaves, washed and dried

2 tablespoons lime juice

2 ounces pineapple juice

¼ tsp molasses

3 tbsp agave nectar

3 ounces club soda

crushed ice

4-6 cantaloupe melon balls

Place mint leaves in a cocktail shaker and add lime juice, agave nectar, pineapple juice, and molasses.  Mixing pineapple juice with molasses is a mock replicate of rum.  Using a muddler, muddle the mint for approximately 30 seconds to release the mint essence.  By all means, if you love mint, add as much as you like.  I prefer a whisper of a hint of mint.  Add crushed ice to shaker and club soda.  Stir with long spoon and pour into tall glass.  Add melon balls to the glass by using the long spoon, placing them strategically to where they look good enough to eat.  As you drink down your Mock Melon Mint Mojito, the melon balls will absorb the molasses and pineapple and will be a delicious ending touch to eat.  Be sure to tell your guests that the darker colored drinks are the Mocktails.  Better yet, add a little whimsy to your entertaining.

Speaking of entertaining…

The fine folks at Microplane and Argenta Market wanted to join our virtual dinner party and provide someone with a bountiful prize pack worth $160. Contest ends August 25th, so be sure to enter the contest in between bites.

Enter contest, here.

I hope you enjoyed our little pre-dinner refreshment this evening.Have a wonderful continuation of dinner with my friends.

I knew it was just a matter of time before you all would meet.
Eat well, my friends. Eat well.

Why not? I think you should do it! The club soda I used had no sugar, so sparkling water is basically the same!

You know, Debbie, why don't you? I telecommute on Fridays and we could have a lovely lunch together. Give me the day and I'll make the time!

Sounds like you are on your way… find a friend who grows mint. She'll probably have TONS to give away. 🙂

If you're like me, I try my best to eat as healthy If you're like me, I try my best to eat as healthy as possible. And that often means to load up on all types of vegetables! Sometimes that can be a challenge, depending on picky eaters or perhaps not having enough variety, and - frankly - don't we sometimes just need a little imagination and motivation in the kitchen?

A couple of years ago I had the privilege of shooting product shots for @drcowanspowders and quickly became in love with the ease of vegetable powders. They can be used like spices and "hidden" in all types of foods like burgers, yogurts, smoothies, soups, and dips. To name a few. So, now I'm also an affiliate for them because I love them. Please use my link in bio to check them out (at no cost to you) and because they are celebrating their 5 year anniversary, you get 25% off storewide until April 19th. Sooo.... hurry!

Ask me any questions, I'd be happy to answer!
Hello, beautiful lemon! 🍋🍋🍋 If you're som Hello, beautiful lemon! 🍋🍋🍋 If you're someone who buys a lot of lemons and juices them... did you know that you can "zest" the peels using a microplane and stick them in the freezer for future use? Meal prepping at its best, baby! I posted a recipe on the blog last week for Instant Pot pressure cooker creme brulee with a touch of lemon. This zest is perfect for that! I also keep it on hand for madeleines... Dennis requests those like every day!
Are you using your pressure cooker to its fullest Are you using your pressure cooker to its fullest potential? I've barely scratched the surface but I gotta' tell you... I use it all week long for soups! Recently I decided that I wanted to use it to make a dessert and started browsing around on Pinterest. I decided to make creme brulee in my Instant Pot! After playing around with it, I posted (link in bio) a recipe for creme brulee with a touch of lemon.🍋
I don't really have a sweet tooth yet I always hav I don't really have a sweet tooth yet I always have a "little something" in the pantry to satisfy the little bit of sweet tooth that I have! After a zillion years of blogging, I can count on one hand the number of desserts that I've blogged about. So, when I do create a recipe and actually post it, I'm like, "Look at me, I'm a baker now!" hahaha Actually, it's not all about baking. For example, I just posted a recipe for Instant Pot creme brulee with a touch of lemon. Link in bio, of course! The ingredients are super simple and the pressure cooker makes it super fast and easy. Best of all? It is #lowcarb and #keto!
I don't know about you, but man I love a good sala I don't know about you, but man I love a good salad. The best thing about this salad (okay, besides the taste) is that the ingredients are sooooo easy to make ahead of time. That means you can dinner prep and toss this salad together at the last moment. As all good salad should do.
The stars of this healthy salad are the hearty veggies: sweet potatoes and radishes. You’re going to roast them first. That’s right, roast!
A healthy salad is wholesome. Substantial. Strong A healthy salad is wholesome. Substantial. Strong enough to sail on its own, yet perfectly willing to tag along with the main course. In fact, I think you’ll love serving this salad whenever you may have someone at the dinner table that is drawn to more-veggies and less-meat.

It’s pretty isn’t it?
