sweet potato toast - main (c)nwafoodie

How’s your healthy lifestyle focus coming along? I applaud your efforts and join you in the never-ending quest for whole health. No doubt you are experimenting with new recipes, food prep, meal planning, and making sure you are drinking enough water to keep things moving along. High five, you!

Last June the interwebs exploded with a new food sensation. No, no, no. Not kale. Bite your tongue. It exploded over sweet potato toast. After that first initial “whaaaat, what is that?” retweeted around the world, sweet potato toast started settling into their rightful place on the breakfast, brunch, lunch, and dinner table. Google searches for this treat are spiking back up again, no doubt as a results of folks embracing a healthier lifestyle in the new year.

I’ve been craving these again and decided to dig up an old recipe from last August that I shared with the Oak and Earth girls. They were all jumping in for a month of #Whole30 and well, these little beauties are great for a #whole30, #paleo, #keto, and #THM lifestyle.

And for the rest of us not on those diets… these little beauties are great for everyday eating. Period.

They’re not hard to make, but if you want an official recipe for sweet potato toasts with avocado or for sweet potato toasts with peanut butter and banana, jump on over to Oak and Earth. While you’re there, stay awhile and check out their gorgeous site. These local Siloam Springs pals blog about healthy living, DIY/crafts, and lifestyle.

All right up our alley.

And they’re in our backyard. Literally and virtually.

Happy toasting.

Eat well, my friends. Eat well.

“Just like becoming an expert in wine–you learn by drinking it, the best you can afford–you learn about great food by finding the best there is, whether simply or luxurious. Then you savor it, analyze it, and discuss it with your companions, and you compare it with other experiences.” – Julia Child
