An autumn-inspired cream of chunky carrot soup.

What is your favorite color?

Mine is autumn.

Seriously, everywhere I look my eyes are over-stimulated by the kaleidoscope of colors rocking out right now.  It inspires me to incorporate earthier fall colors into my meals.

For instance, last night was crock-pot chicken with a side of beets and roasted vegetables.

All I needed to do was throw in a cozy fire in the fireplace and my evening became a Hallmark-channel movie (without some crazy plot, thankfully).

Every Thanksgiving meal I like to add a little savory autumn-inspired soup to the menu as a key part of the appetizers.

My niece Krista is still in love with a butternut squash soup from several years ago.  If only I could remember exactly how I made that… anyone else ever make something spectacular and then forget how you made it?

Ugh.

Thankfully, I wrote down my ingredients with this latest soup creation so I can remember it in just a few weeks. I call this delicious soup cream of chunky carrot soup.

Because, without a little bit of chunky, creamy carrots may taste delicious but they look like baby food.  Who wants that (except a baby)?

This may be just the easiest soup recipe you have ever made and one of the tastiest. Definitely a crowd-pleaser.
