One of my favorite movies is Last Holiday, with Queen Latifah and L.L. Cool J. In it, she is a budding chef and the appetizers and entrees she creates throughout the movie are swoon-worthy! This mushroom hash on a toasted baguette is inspired by one of the beginning scenes where she makes a duck hash on toast. 

You can mentally taste the crunch and imagine how incredibly delicious it is!

This is a vegan appetizer that everyone will enjoy!

This appetizer has no eggs, dairy, or any other animal-derived product. In otherwords, it’s vegan. 

Although I am not a vegan, I am intrigued by all-things-veggies and am constantly trying to get more vegetables in my life! The hash in this appetizer is made of purple sweet potatoes, Swiss chard, green onions, and Big Mountain Food Lion’s Man Mushroom Crumble.

The simple combination tastes anything but simple! It’s a crowd-pleaser!

What is Lion’s Mane Mushroom Crumble?

Lion’s Mane is an edible mushroom that is often referred to as “the smart mushroom.” Apparently, it supports cognitive health. I don’t know about that yet I DO know that if you’re into mushrooms, you’re going to enjoy the taste of Lion’s Mane.

An easy way to try Lion’s Mane mushroom is getting it directly from Big Mountain Foods and their Lion’s Mane Mushroom Crumble. Basically, it’s a blend of organic Lion’s Mane, Portobello, and Shitake Mushrooms. You buy it fresh and keep it in the fridge.

This is a quick and easy appetizer.

Basically, there are three steps to this appetizer. (1) You boil a purple sweet potato, (2) toast some baguette slices, and (3) sauté the Big Mountain Food Lion’s Mane Mushroom Crumble in a skillet with extra virgin olive oil, salt pepper, Swiss Chard, green onion, and the sweet potatoes.

What does it taste like? What do I serve with this?

The combination of mushroom, Swiss chard, green onion, and sweet potatoes all work together in unison: savory, bitter, crunchy, and sweet all tied together with heat and a drizzle of olive oil. Delicious!

Obviously, this is a perfect appetizer that covers a lot of ground where not much else is needed. I also like to make it as a side whenever I make a big salad for dinner. So, while it’s an appetizer it can also be served as a side dish!

Lion’s Mane Mushroom Hash on Toasted Baguette

The hash in this appetizer is made of purple sweet potatoes, Swiss chard, green onions, and Lion’s Man Mushroom Crumble.

Ingredients

  • 1 baguette
  • 4 tbsp extra virgin olive oil
  • 1 1/4 tsp sea salt
  • 1/8 tsp ground black pepper
  • 1 medium purple sweet potato
  • 1 box Big Mountain Food Lion's Mane Mushroom Crumble
  • 3 Swiss Chard leaves (shredded) and stems (minched)
  • 1 green onion, minced
Get Recipe Ingredients

Instructions

  • Add sweet potato to water with 1 teaspoon salt and cover. Boil on high heat for 25 minutes or until cooked. Drain and let cool. Peel and chop into small pieces.
  • Preheat oven to Bake 350 degrees. Slice baguette on a diagonal and dip into bowl of 3 tablespoons of olive oil. Season with salt and pepper and bake for 15 minutes until toasted.
  • In a skillet over medium heat, add 1 tablespoon olive oil, 1 box of Big Mountain Food Lion’s Mane Mushroom Crumble, Swiss Chard, and green onions. Sauté for 10 minutes and add purple mushrooms.
  • Place crumble on toasts. Serve with a drizzle of extra virgin olive oil.

There is something quite glorious about simplicity There is something quite glorious about simplicity. I'm really feeling it as Dennis and I sit here in our living room, next to the crackling fire. Full disclosure, this picture isn't me BUT I do have the exact same coffee cup. Anyoo, I'm reminded how wonderful it is to be still. Not that I ever forget that reminder, it's just easier to revel in it, next to a fire. With snow softing falling outside. You know what I mean?
My coffee routine is alllll over the place! Firs My coffee routine is alllll over the place! 

First, it was a percolator.
Then came the Breville coffee maker.
Next, along came a bodum pour over.
Quickly replaced by a French Press.
Then came an Aeropress.
Followed by a rediscovery of a favorite instant brand we enjoyed in Isreal.
Now, Aeropress is making a comeback. 
And our beloved LaVazza espresso.
Which tastes like vacation at the Sonnelap in Vail.

Am I the only one who does coffee in phases?

What's next?

Probably need an espresso maker!

Microwave turntable = quick, fast, speed

Record player turntable = slow, easy, chill

Both have their places. But man, oh man, I am finding myself craving more of the latter: slow, easy, chill. 

Now, to get a record player...
Arkansas Black Apples are in season, and the persi Arkansas Black Apples are in season, and the persimmon trees are loaded down hard. Even though many markets are closed for the season, there is still a bounty if we look around!
