When it comes to road preparation, beet juice and salt are often used to keep the roads safe during winter weather, but why not use that same idea for a cocktail? That’s what I thought when I whipped up a delicious De-Icer Martini using beet juice and a hint of salt. Trust me, it’s as good as it sounds.

Weathering Extremes with a Beet Juice Martini


This past week, we’ve experienced a 90-degree weather swing in the Ozarks – from bone-chilling snowstorms to a surprise summer-like day. It’s a reminder that you should always be prepared for weather extremes. While most people rush to grab toilet paper, milk, eggs, bread, beer, and candy during a storm, if you’re a foodie, your emergency run might look a little different, right?

Me? I grabbed a tin of smoked trout, ahi tuna, and extra dry vermouth because, let’s face it, martinis are the answer to everything.

The Beet Juice Solution: What’s the Deal?


Here in the Ozarks, our road crews use a special mix of beet juice to pre-treat the pavement before a big storm. But for most of us, ice melt is the go-to solution – because let’s be real, beet juice isn’t something we typically stock in our kitchens.

Or… is it?

Let’s talk about the magic of beet juice vs. beet powder.

If you’re lucky enough to have a juicer and fresh beets, then making beet juice is easy! If not, you can always grab a bottle from the natural food store. However, the price can be steep, and you’ll need to drink it quickly once opened.

Enter Plan C: Beet powder.

Beet powder is an incredibly versatile pantry staple. You can mix it with a little water to create your own beet juice, or add it to smoothies, yogurt, and even burgers for a nutrient boost. Beet powder is affordable, lasts longer, and can easily be stored in your pantry. It’s perfect for when you need beet juice in a pinch!

How to Make the Perfect De-Icer Martini with Beet Juice and Salt

Inspired by our local road crews and my emergency pantry supplies, I created a fun and festive De-Icer Martini made with beet juice and a pinch of salt. It’s a playful nod to staying prepared, while enjoying a delicious cocktail at the same time.

Key Ingredients for the De-Icer Martini:

  • Beet Juice (or beet powder)
  • A pinch of salt
  • Dry vermouth
  • Smoked trout or ahi tuna (optional garnishes)

Chill Your Glass for the Perfect Martini.

A quick tip for making the perfect De-Icer Martini: before you start mixing, fill your martini glass or coupe with ice water to chill it. A chilled glass makes the cocktail taste that much better, ensuring your drink is as refreshing as possible.

Before a storm hits, stock up on Dr. Cowan’s Vegetable Powders—and while you’re there, try his leek powder too. It’s one of my favorites for adding depth to soups, scrambled eggs, or even as a dip in sour cream.

De-Icer Martini made with beet juice and a touch of salt

If beet juice and salt are good enough for the roads, they're good enough for a martini. So enjoy this tasty martini made with beet juice and a touch of salt.
Course Drinks

Ingredients

  • 1 ounce water
  • 1/2 tsp beet powder
  • 4 ounces gin (or vodka)
  • 2 ounces extra dry vermouth
  • 1/4 tsp sea salt
Get Recipe Ingredients

Instructions

  • Chill glasses by filling with ice cubes and cool water. Sit aside and dump before serving.
  • Stir one-ounce of water with beet powder and stir until thoroughly dissolved. Depending on the quality of your beet powder, you may have to strain to remove particles.
  • Fill cocktail shaker half way with ice and add all ingredients, including beet juice, and hard-shake ten shakes. 
  • Strain and pour into glasses and serve.

There is something quite glorious about simplicity There is something quite glorious about simplicity. I'm really feeling it as Dennis and I sit here in our living room, next to the crackling fire. Full disclosure, this picture isn't me BUT I do have the exact same coffee cup. Anyoo, I'm reminded how wonderful it is to be still. Not that I ever forget that reminder, it's just easier to revel in it, next to a fire. With snow softing falling outside. You know what I mean?
My coffee routine is alllll over the place! Firs My coffee routine is alllll over the place! 

First, it was a percolator.
Then came the Breville coffee maker.
Next, along came a bodum pour over.
Quickly replaced by a French Press.
Then came an Aeropress.
Followed by a rediscovery of a favorite instant brand we enjoyed in Isreal.
Now, Aeropress is making a comeback. 
And our beloved LaVazza espresso.
Which tastes like vacation at the Sonnelap in Vail.

Am I the only one who does coffee in phases?

What's next?

Probably need an espresso maker!

Microwave turntable = quick, fast, speed

Record player turntable = slow, easy, chill

Both have their places. But man, oh man, I am finding myself craving more of the latter: slow, easy, chill. 

Now, to get a record player...
Arkansas Black Apples are in season, and the persi Arkansas Black Apples are in season, and the persimmon trees are loaded down hard. Even though many markets are closed for the season, there is still a bounty if we look around!
