If I had to choose between a cake and French fries, the answer will always be fries. If you’re in the Northwest Arkansas area, Spud Doctors Food Truck in Bentonville has the answer to all our potato yearnings.

A food truck entirely focused on potatoes?

If you stop and think about it… the concept is brilliant. Freshly made fries, huge baked potatoes topped with all sorts of deliciously delightful toppings are what happy comfort foods are made of!

Before you say, “STOP. SAY NO MORE. I’M KETO,” take a deep breath. Spud Doctors also has cauliflower available as a potato substitute. Shew, that was a close one.

Tell me more, this I gotta see!

In my opinion, co-owners Josh Kitterman and Mark Dirienzo are what makes Spud Doctors so interesting and so I-gotta-have-some-today.

The two were coworkers at Walmart’s CMI division and got to know each other better over post-work whisky and cigars. Before they knew it, they discovered they had even more in common than work, wives (who were already best friends), whiskey, and cigars.

They had food in common.

Mark’s food background included owning a pizza shop in Vegas to a fish market in New York. Josh cooked his entire career in NWA and locals may remember “Josh’s menu” at the Plaza Pizza in Centerton. While work in CMI was good, it was their great love of the food industry that brought them back. 

Obviously, they also share a love for potatoes.

A need for baked potatoes.

Josh and Mark realized there was a huge gap in NWA. No one was serving baked potatoes! Shortly thereafter, their Spud Doctors food truck opened in Bella Vista in September 2019 before moving to Bentonville on SW A Street, several blocks from the square next to the Soapbox Influence building.

Here’s an insider tip from the Spud Doctors…

Whether or not you live in Northwest Arkansas, let me at least leave you with an insider tip that Josh and Mark shared about making the perfect potato wedge. The secret is that whenever you cook baked potatoes for dinner, throw in a couple of extra and put those extra in the fridge. Then, the next day quarter them lengthwise and make potato wedges!
