Simple Joyful Food

Kitchen confidence made simple.

have a good time

Living in thankfulness.

November 23, 2012 2 Comments
I hope you had a wonderful Thanksgiving filled with traditions, joy, laughter, and a bounty of special foods.  Best of all, I hope it was a special day of giving thanks for the blessings given to all of us, small and large.

May we live every day with thanksgiving.

Today marks one month since my last post.  Sorry about that.  I realized that many of you may not be following me on my Facebook page and may not be aware that my days are recently filled with a very sick dad.  Every moment with him I am thankful for.

Today I propose that we live every day like Thanksgiving Day!

That we look forward to it with the same kind of excitement as planning that one big meal.

That we plan out the basics of what we want in life yet go with the flow to capture special moments.

That we all pitch in together to make meals together special.

And do it often.

And yes, I propose that we live filled with the thankfulness of abundance.

Every day.

May you have a wonderful thanksgiving day today, and tomorrow, and Sunday, and Monday, and every day.

Hugs,

Lyndi

Eat well, my friends. Eat well.

This morning I opened up a can of white northern beans and cooked it on the stove with broth, garlic, salt and pepper. Added a fresh touch of chopped parsley.

Next, I toasted sourdough bread and covered it with the bean broth and topped with two froached eggs (fried + poached) and yep, you guessed it! Added a fresh touch of chopped parsley and some parmesan.

Dennis just texted me from his office and said it was "Feed Phil fist-pumping worthy!" Now, THAT's a compliment!

Ya’ll, this @puretexanchili chili truly is delicious! We ate it right away in the bowl with our favorite toppings.

I also made a quick cornbread and sprinkled the chili right on top with cheese and baked it. Super yum!

I know there are so many camps when it comes to chili: beans/no beans, ground beef/cubed steak, canned tomatoes/no tomatoes, onions/no onions… let me be the first to say that this chili is perfection.

It seriously needs nothing else.

Except for toppings and a spoon.

They ship everything via Priority Mail within 24 hours so, if the USPS is working smoothly, February 1 should be a very safe ‘order by’ date.

Great news, the recipe for making their Championship Chili is right on the Pure Texan Chili Mix bag and it is sooooooo easy to make.

We’re talking simple no-fuss steps:

Brown two-pounds ground beef, drain and add mix, add 8 ounces tomato sauce and 10 ounces of water. Summer very slow for 45 minutes and voila! Done!

“Just like becoming an expert in wine–you learn by drinking it, the best you can afford–you learn about great food by finding the best there is, whether simply or luxurious. Then you savor it, analyze it, and discuss it with your companions, and you compare it with other experiences.” – Julia Child
