Back in September I decided to take some “beauty shots” of a dish I make often, sitting on a bed of green rice. And by often, I mean like alllll the time. These taco meatballs are quick and easy because the ingredients are ones I usually always have on hand in my pantry. Usually always? Yeah, that’s a thing.

I finally remembered to post that taco meatball recipe on Facebook the other day as well pin it to Pinterest. I am humbled that so many of you have tried this recipe and commented on how much you’ve enjoyed it. Thank you! That makes my heart sing!Last night as I was face-timing with my Aunt Patty, she and I chatted about them and how she likes to freeze them for future meals. What a great tip! Then she asked, “What’s in that green rice in the photo?”

Good question. Ironically, it is actually called Green Rice, a side dish with the world’s shortest description and the most unimaginative title on earth. Seriously, why mess with simplicity if that is actually the most perfect description? Green rice is a side dish that goes with everything. Pair it with grilled chicken, fajitas, steak and even taco meatballs. It is an easy to make rice dish made with Riceland long grain white rice, sweet onions, chopped cilantro and hot sauce. Yep, hot sauce. The “green” in green rice is chopped up cilantro. If you are pairing this with an Italian dish, by all means swap out the fresh cilantro with fresh Italian parsley.

Find this Green Rice recipe over on the Riceland blog. And……….. while you are there, browse a little. You’ll find all kinds of wonderful rice-inspired dishes.

Happy side dishing.

Eat well, my friends. Eat well.
