I’ve been running around the past few weeks and my pantry is getting quite lean. Leaner than usual, that is. As you know, I purposely create a lean pantry so I can easily see what I have and what I need. And since the contents are curated, keeping it lean makes it simple to use what I have and food doesn’t go to waste.

Friday was shopping day and I desperately needed to shop for bulk foods at Sam’s Club and filler ingredient items at Harp’s Foods. I keep plenty of staples on hand for recipe creation, such as bulk rice, bone-in chicken breasts, and canned tomatoes, but I was out of my Riceland Boil-In-Bag long grain white rice. With an upcoming busy weekend, I knew that having access to quick-and-easy rice was necessary since time was at a premium.

The Riceland Boil-in-Bag rice isn’t available at every Harp’s Store but I knew that the downtown Rogers store stocks it so away I went. It’s really easy to find in the rice aisle, just look for the bright blue box (and the really great price). Riceland Brand is my go-to rice product because it is a coop of Arkansas and Missouri farmers who work together to make Riceland Foods the world’s largest miller and marketer of rice. After arriving home and putting the groceries away, I needed to start preparing dinner since company was arriving soon. Okay, here’s the great thing about boil-in-bag rice…. you can always throw in an extra bag or two in a pot with boiling water and it will be ready in ten minutes. Drain it and store it in the fridge until you are ready to use. Take advantage of when you are preparing other meals in the kitchen by also working on future meal prep. It makes life easier!

This morning is a perfect example of just that. I knew that I wanted to make something substantial without all the long preparation and mess. I decided on fried egg rice… it’s perfect for breakfast, lunch, or dinner. Thankfully, I had already pre-cooked an extra bag of Riceland Boil-In-Bag white rice so prepping all the ingredients for fried egg rice took minutes to pull together.

 

Fried Egg Rice

Serves 4-6

Ingredients

1 bag Riceland Boil-In-Bag Long Grain White Rice, precooked

1 ½ tablespoon Riceland Rice Bran oil or other high heat oil

2 slices turkey bacon, raw, chopped

6 ounce frozen peas and carrots, precooked according to directions on bag

½ cup mung beans

2 scallions, thinly sliced

1 garlic clove, minced

1 head romaine lettuce, thinly sliced

2 eggs, beat in small bowl

¼ teaspoon sea salt

1/8th teaspoon black pepper

dash cayenne pepper

Instructions

Precook rice according to directions on box and store in fridge.

Heat wok or heavy bottomed skillet on high heat. Add high heat oil such as Riceland Rice Bran oil or Macadamia Nut Oil. Once oil is very hot, add rice and stir-fry for 2 minutes.

Add bacon, peas, carrots, sprouts, ½ of the scallions, and garlic and stir-fry for 3 minutes.

Add romaine and stir-fry for 1 minute.

Push ingredients to the side and add eggs and let sit for thirty seconds. Stir-fry with other ingredients for 3 minutes.

Add salt, black pepper, and cayenne. Stir-fry.

Remove from heat, serve with sprinkling of remaining scallions.

Serve and enjoy.

Feel free to add soy sauce if you desire.

 

This fried egg rice isn’t your ordinary Hibachi-style fried rice. Think of it as the “clean” version, more vegetables and more pure taste from the ingredients than having just a mouthful of soy sauce. All the vegetables can be interchanged with whatever ingredients you have in your fridge. Get creative! The key is to keep the two main ingredients as pure as possible: good eggs and good rice.

After a few minutes of stir-frying, you are ready to hit the day running with a solid breakfast, stride confidently into midday with a solid lunch, or end the day with a bang with a solid dinner.

      Any time! I put some in the freezer to test it out. Would be a good “on demand” meal.

      I forget about it and then when I do, I’m like, “oh yeah, this is good!” Same thing for sautéing cucumbers. 🙂
