Yep, you read that right! Kelp pesto! I made these grilled chicken skewers with kelp pesto over the weekend and they are soooo good! 

News on the street – in case you haven’t heard – kelp is the new kale! Mooooove on over, kale! Bring me some sea asparagus pesto baby, because I’M IN LOVE!

What’s this about kelp?

Okay, let’s step back a few paces because right about now you may be thinking “oh what’s this about kelp?” Specifically, the type of kelp I’m talking about is sea asparagus, a wild-grown superfood that is hand-foraged from wild Alaskan beaches by Foraged & Found Wild Alaskan Provisions and turned into pesto. They are a woman-owned business from up north that is committed to sustainability and environmental stewardship. I mean, we’re talking foraging sea kelp here!

If you’re looking for a pesto that is nutrient-dense and packed full of vitamins, this is it. Ingredients include sea asparagus kelp, extra virgin olive oil, basil, lemon juice, almonds, Parmesan, garlic, and pepper. 100% deliciousness.

I love everything about Alaska. 

Twelve years ago, Dennis and I went to Alaska for our twentieth wedding anniversary. We rented a 4×4 truck and put over 1,600 miles over a week of exploration. We wanted to take it all in and have the great Alaskan experience. Freshly caught fish that tasted like the sea was on the daily checklist. There’s just something so wonderful about foraging something from the wild.

So yeah, I am definitely into this Alaska sea kelp pesto and can’t wait to checkout their line of kelp salsas and pickles, too.

But first, dinner is calling.

I ordered these adorable little six-inch skewers recently because – well – who doesn’t want adorable little six-inch skewers (full disclosure: Amazon affiliate link)? 

You already know that I’m really into Tapas Tuesday and small plates, so a platter of small bite-sized chicken skewers with kelp pesto skewers was on my mind. With a side of beans (and ironically, tossed with kale because I’ve been trying to like it) and purple sweet potatoes, 

Dennis and I were in for a healthy and delicious evening!

And then I remembered… I had Sea Asparagus Pesto! I slathered the chicken bites with three tablespoons of the pesto and added some crushed pepper flakes, brown sugar (for the good grill bits!), and salt and pepper.

After a short grilling time, these babies were ready to serve!

Grilled Chicken Skewers with Kelp Pesto

Grilled chicken thighs smothered with sea asparagus pesto

Ingredients

  • 3 boneless chicken thighs, skin removed
  • 3 tbsp Foraged & Found Wild Provisions Sea Asparagus Pesto
  • 1 tbsp brown sugar
  • 1/8 tsp crushed red pepper flakes
  • 1/4 tsp sea salt
  • 1/8 tsp ground black pepper
Get Recipe Ingredients

Instructions

  • Cut chicken into bite-sized pieces and place in medium-sized bowl.
  • Add ingredients to bowl and mix thoroughly.
  • Thread chicken on skewers. 5-7 pieces on each skewer will fill 10 six-inch skewers.
  • Heat gas grill to medium-high heat (approximately 300 degrees). Clean grill and lightly oil.
  • Place skewers on the grill, using tongs to flip over after approximately 8 minutes and cook the other side until internal temperature is 165 degrees.
  • Remove from heat and cover loosely with tin foil to rest for 5 minutes.

There is something quite glorious about simplicity There is something quite glorious about simplicity. I'm really feeling it as Dennis and I sit here in our living room, next to the crackling fire. Full disclosure, this picture isn't me BUT I do have the exact same coffee cup. Anyoo, I'm reminded how wonderful it is to be still. Not that I ever forget that reminder, it's just easier to revel in it, next to a fire. With snow softing falling outside. You know what I mean?

First, it was a percolator.
Then came the Breville coffee maker.
Next, along came a bodum pour over.
Quickly replaced by a French Press.
Then came an Aeropress.
Followed by a rediscovery of a favorite instant brand we enjoyed in Isreal.
Now, Aeropress is making a comeback. 
And our beloved LaVazza espresso.
Which tastes like vacation at the Sonnelap in Vail.

Am I the only one who does coffee in phases?

What's next?

Probably need an espresso maker!
Isn't it interesting how two things with the same Isn't it interesting how two things with the same word can convey entirely different moods?

Microwave turntable = quick, fast, speed

Record player turntable = slow, easy, chill

Both have their places. But man, oh man, I am finding myself craving more of the latter: slow, easy, chill. 

Now, to get a record player...
Arkansas Black Apples are in season, and the persi Arkansas Black Apples are in season, and the persimmon trees are loaded down hard. Even though many markets are closed for the season, there is still a bounty if we look around!
