Italian vinegar in a cocktail is a secret weapon.

Basically, I desperately want to get the word out that stocking good quality vinegar in your pantry means that whenever you have a recipe that calls for an acid, like lime or lemon juice… vinegar is your loyal best friend. Instead of being 100% tart and all bitter-faced like citrus, stocking the right vinegars will give both depth and balance that marries well with spirits.  It’s a simple little swap. So small that you would think that it wouldn’t make a difference. Sì, naturalmente. Yes, of course it makes a difference!
